Help for non mark down user

Can use help from the community. I am not a mark-down user. Mac Sonoma and IOS 17. I want to be able to create a note. All my notes start with dddd-mm-dd then name of the note. Then new paragraph. I like check marks but they show as brackets when I try to make them.

Can someone help me to best use drafts even though I am not a Markdown user, or show me the advantage of learning and using Markdown in advance?
