I’ve tried to create a shortcut for the share sheet to append text or urls to an “inbox / today” draft - but no luck. I haven’t worked out how to create this shortcut.

Try this.
It uses a standard format title and tag for the daily draft. If the shortcut can find it, it’ll append. If it can’t find it, it’ll create the draft.
Just modify it for your preferred format, tag, and add any spacer for appended entries that you might like to use; and you should be good to go.
