Maybe this could be a viable option for your Shortcut text editing issue?
I had a go at putting together a basic editing field that you can use with Shortcuts, and that you can make as large as you want on your iOS device. But it isn’t using Drafts … so you’d miss out on any actions you might have wanted to take advantage of; but I think it is a step up from Shortcuts alone.
