CC is carbon copy - all CC receivers get a copy and is visible to all receivers
BCC is blind carbon copy - all bcc receivers get a copy but the contact is hidden to the TO and CC receivers

I would also say BCC should be used very sparingly. The idea that people each get partial views of a conversation is not great.

True, I know some good use cases.

  1. Simple mailing lists with mixed receivers - to not distribute names and emails between your customers. (put your own email address in the To field)
  2. Own Service addresses - like add to your gtd or filing system (omnifocus and things both have an email service but you would not give that to anyone else)
  3. Add your boss or colleague without escalating the Email - in my line of work a CC with my CEO would be an escalation, given that he is also working in a technical role this sometimes is an unwanted behaviour, hence the BCC

Please also look at the nice ReplyTo field in the email protocol- there is such potential in it.
